I currently have my company Wiki setup so that only registered users can view the pages. If they are not registered (or logged in) the standard "Login Required" page shows up. I would like to edit that page so that it gives an explanation of why the wiki is locked and who they can contact to get approval to join. I cannot for the life of me figure out how to do this!! Any tips would be helpful.

Try editing the page mediawiki:loginreqpagetext on your wiki ($1 is the link to special:userlogin using the title text at mediawiki:loginreqlink).
(Note: on newer mediawiki, you can see where the system messages come from by appending ?uselang=qqx to a url)
The 'login required' page text is visible, but still not editable! Do I need to do something else?
"still not editable" where, and why "still"? Which exact steps did you perform?

You can change the content of the wiki page MediaWiki:Loginreqpagetext in your wiki. The content of this page is what shows up on the login page.
And in this text, the $1 sign gets replaced by the login link.
